Steps to make Sausage, Bacon & Cheese Bakes:
  1. Make your pastry first. Sift the flour into a bowl and add the salt, then break up the butter roughly and rub it into the flour. Don’t get it like breadcrumbs; you want to see bits of butter in the mix. Pour in about 200ml of the water and then make the dough. If it’s too dry add more of the water until you’ve got a good soft dough. Wrap it in cling film and then pop it into the fridge for 20 minutes.
  2. Once the 20 minutes is up get it out and, on a lightly floured surface, roll it into a perfect rectangle measuring 40cm x 100cm. Fold the top third to the middle and then the bottom third up and over that. Turn it ¼ turn and then roll it out to the same dimension as before, fold it again and then wrap it up and put it back in the fridge until you are ready to use it.
  3. Cook your sausages and bacon and chop them up relatively finely and put them into a bowl to one side whilst you make your cheddar sauce.
  4. To make that just put the milk, flour and butter into a saucepan and over a moderate heat. Use a hand whisk and whisk whilst it heats until it gets to boiling point. It will start to thicken; keep whisking for another 2 minutes as it boils and add a dash of pepper to season. Add the cheese and continue to stir around until the cheese is melted and then remove from the heat.
  5. Add the cheese sauce to the bacon & sausage and stir around so it’s all combined.
  6. Remove your pastry from the fridge and roll it out & divide up as you wish to make either sausage rolls or bakes as I’ve showed above. Fill it with enough of the filling mixture so as to give a good amount but leave enough room so that you can seal the edge of the pastry when you ‘close’ it.
  7. Glaze your bakes or sausage rolls with beaten egg.
  8. Pop into the oven (pre-heat it) at 180°C/350°F/Gas Mark 4 for 25-30 minutes until golden brown. Remove and either eat hot or wait until cold. Best eaten within 48 hours.
  9. Ready to serve and ENJOY!
