  1. Preparing the Paneer~ Bring milk to a boil, lower the flame and add vinegar. Now continuously stir the milk until the solid separates from whey.
  2. Pass this through a muslin cloth. Hold it up for a few seconds to remove the water. Wash it nicely under a running tap to remove the vinegar smell. Do not throw the water that is collected. As we will use it to Knead the dough.
  3. Preparing the Paneer Filling~ In a kadhai heat 2 tbspn oil. Add finely chopped onions, keep the flame low and saute until it turns golden brown.
  4. Now add ginger garlic paste, green chillies and tomatoes. Saute well. Add salt to taste.
  5. Mix well. Saute in low flame until tomatoes get soft and mushy.
  6. Add all the spices, haldi powder, garam masala, dhaniya powder, Kashmiri red chilli powder, amchur powder and rock salt. Give it a good mix.
  7. As the masala is cooked, add the paneer. Mix well. At this point check for salt and add if necessary. Add freshly chopped mint leaves. Mix well. Remove from heat and let the filling cool down completely.
  8. Preparing the dough and Parathas~ In a parat take about 1 cup maida. To this add ½tspn salt and 1tspn oil. Add the required amout of water to Knead a soft dough. (Use the left over whey or water that we got after curdling the milk.)
  9. Divide the dough into 4 equal portions. Roll it out into a 10 inch chapati.
  10. Put the filling at the centre, bring the edges towards the centre and shape it into a rectangular parcel.
  11. In a nonstick pan heat 2 tbspn oil. Cook the paratha on a low heat for 2minuets. Now flip and cook the other side for another 1 to 1½minutes or until paratha turns golden brown and crisp. Flip again and cook for another 30seconds. Remove from heat.
  12. Cut the Paratha in 4 triangles. Serve with ketchup or Coriander chutney.
  13. Ready to serve and ENJOY!
