  1. First of all boil potatoes and after some time mash all potatoes,then make a paste of ginger garlic and green chilli.
  2. Put pan on gas and add oil and add mustard 1 tsp then add Ginger garlic and chilli paste then mix it and add salt as per potatoes test. then cook it as a light brown colour.
  3. Then add turmeric powder and curry leaves then mix it all at low flame and add 1 pinch Hing and mix it.
  4. Tadka is ready and add mashed potatoes and mix it and add fresh coriander in better and make balls size of pav.
  5. Then after in a bowl take besan 1 cup add salt as per taste and water as per requirement to add and mix it and add baking soda 1/2 teaspoon and add 1 tsp hot oil on soda. Mix very well better of medium consistency.
  6. Then bolls deep in besan batter and fry it all of light brown colour.then in a pav spread garlic masala or garlic chutney and put inside vada. And serve with tomato sauce and green chutney.
  7. Mumbai street food real taste of vada pav is ready.
